Analisis Efisiensi Proses Produksi Kopi Biji Salak Menggunakan Lean Manufacturing dengan Pendekatan Value Stream Mapping (VSM) Pada UD Bunda ArumSholikhatulLaila SholikhatulauthorThis study aims to analyze the efficiency of the salak coffee bean production process at UD Bunda Arum using Lean Manufacturing with a Value Stream Mapping (VSM) approach. This study uses a quantitative descriptive method with observation, interviews, documentation, and questionnaires. The analysis was conducted through Current State Mapping (CSM), identification of waste using the 3M (Muda, Mura, Muri) and 5W+1H concepts, preparation of Future State Mapping (FSM), and calculation of Process Cycle Efficiency (PCE). The results showed a total production lead time of 168 hours (7 days) with a value-added time of 19 hours. Thus, a PCE value of 11.31% was obtained, indicating a low proportion of value-added activities. Waste was found in almost all stages of the process in the form of waiting and inventory. Although workers' perceptions of efficiency levels were relatively good (83%), objective measurements showed the need for systematic improvements. Proposed improvements through scheduling raw material arrivals, building a solar dryer, scheduling machine maintenance, and balancing the workforce are expected to reduce lead time and increase production efficiency.Prodi Agribisnis2026-07-22Pertanian;AgribisnisThesis
